Pumpkin Pecan Muffins



Welcome back to Pumpkin Month! We started off with a wonderful classic, perfect for a special after dinner dessert. But, what if you want to have pumpkin for breakfast too? Introducing, Pumpkin Nut Muffins! The perfect amount of sweetness. Really moist and scrumptious! 
Chocolate chips complement everything, and a crunch once in a while from a nut, evens everything out. The spices vamp it up and make it very flavourful. The aroma travels throughout the house making you drool while folding the laundry, you know if you like doing that sort of thing... :P Of course, you could do without the chocolate chips and nuts, but that's just what I like! 


But just listen to me go on and on about this great little guy. I think you should try him out yourself!
Get your sleeves rolled up and put on an apron because it's baking time!

Pumpkin Pecan Muffins

Makes approximately 10 

1 cup                   a.p flour
1/2 cup               sugar
2 tbspns              baking powder
1 + 1/2 tsp          cinnamon
1/4 tsp                ground ginger
1/2 tsp                nutmeg
1/2 tsp                salt
1/4 cup               softened butter
1 cup                  pumpkin puree
1/2 cup               milk
1 egg
1 + 1/2 tsp          vanilla
1/3 cup               chocolate chips
1/4 cup               chopped pecans

Preheat oven to 400 degrees. Stir together flour, sugar, baking powder, cinnamon, ginger, nutmeg and salt. With a pastry knife cut butter into the dry ingredients until fully incorporated. In a seperate bowl, mix pumpkin puree, milk, egg and vanilla. Pour pumpkin mixture into the flour mixture. add chocolate chips and nuts, fold gently until just combined. Pour into large muffin cups, make sure they are filled right to the top. Bake for 25 minutes. Enjoy!



These are really good. You must try them! Especially with a smidgen of butter on top. Ooh!
