Coal Candy/ Carbon Dulce
It's getting really close to Christmas, (4 days!) and you've got to get your Christmas shopping done soon. But, maybe, just maybe, there is someone on your list that has been naughty?
No fear, Elanne is here! And I have the perfect idea as a gift for them! Why not give them coal, but be a little sweeter? That's right, Candy Coal. Otherwise known as Carbon Dulce.
They will be baffled and confused but then be amused as they feast on their present! It's a perfect gift for a Secret Santa/ Kris Kringle! My sister and I made stockings to put the coal in, just to tie the whole present together! They turned out so well! You only need three pieces of felt to make 2 stockings! Two for the stocking colour and the other for the trim!
1 egg white
1 1/2 cups powdered sugar divided
1-2 tsp black gel food coloring
1/2 tsp lemon juice
Whisk 1 cup of the powdered sugar along with the remaining ingredients in a medium bowl. Whisk in the following 1/2 cup powdered sugar. The mixture should be pretty stiff as you whisk. The batter should cling to the whisk when you pick it up, and fall in thick pieces clumps. If it doesn't, add a little more powdered sugar until the batter is that consistency. Set aside.
3 cups white sugar
1/4 cup water
Line an 8x8 heat-proof pan with parchment paper, greased. Set aside. Pour water and sugar into medium non-stick saucepan. Mix sugar and water together by stirring and mashing them together with a wooden spoon until the mixture it thoroughly mixed. Insert a candy thermometer and let the mixture cook until it reaches 258-260 degrees. The mixture will stay grainy. The mixture by become brown/yellow from cooking. It should still be grainy and not in a liquid state. When 258-260 degrees is achieved, add the base mixture to the pot and stir. When thoroughly mixed, pour into the prepared pan and allow to stand until hardened. Be fast because it hardens almost as soon as you put it in the pan. When cool and hardened, break into bit size pieces. Enjoy!
-Use food colouring brands such as Wilton or Americolor.
-If the colour looks a bit off, add more food colouring, because black turns into a nasty purple. Black's weird like that.
-Don't let the candy thermometer touch the bottom of the pot! It will mess with your temperature!
-If the sugar and water mixture sticks to the bottom of the pot, don't break the layer off! It will form big, rock hard chunks and won't melt! You will have to pick the rock hard pieces out of the mixture. Not fun.
This is the first time I've made a candy! I left some helpful tips, because my Candy Mixture stuck to the bottom, and I didn't know better... You don't want to go through that agony. Other than that, it was pretty easy!
