Buttermilk Pancakes


There is always that special food that your Mom or Dad makes that you will remember forever. And it seems that no one can replicate it, no mater how hard they try. Even when someone else makes the same kind of food, none will compare! For me it's my Mom's Buttermilk Pancakes. It's funny that my Dad feels completely opposite about pancakes, he can stand them, nor make them! But that's because he's never tried my Mom's.
They are so moist and spongy! They are the perfect way to start a day. You can put your favorite kind of toppings on top too! Like, maple syrup, butter, brown sugar, berries you name it! At my farm we make maple syrup, so we got lots of that handy!


Buttermilk Pancakes

Makes a dozen

1 cup                a.p flour
1/2 tsp              baking soda
1/4 tsp              salt
1 egg
1 cup                buttermilk
1 tbsp               shortening

Mix all the dry ingredients into one bowl. To make your buttermilk mix a cup of milk with 2 tablespoons of lemon juice and let it stand. In another bowl whisk your egg and pour the buttermilk in then whisk again. Pour into the dry ingredients and whisk. Melt the shortening in the pan you are using then add that to the mix. Then ladle your pancakes into the pan, don't flip until you see rather large bubbles on top, it should form a sort of skin and not look as wet. Serve and enjoy! 


Comments:

-You can easily double the recipe.
-Pour the pancakes into the pan with a ladle or squeeze-y bottle. 
-You can use all purpose flour, but if you want a smoother mix, use best for blending.
-Our pancakes are about 4". 

Whatever your fancy these pancakes got you covered. These are one of my favorite home cooked meals, and I hope that maybe they will become yours too.

  4. Haha! We tried our hardest this time, picking out the perfect ones. It is just the angle though, they are mostly ovals. :)
