Lemon Blueberry Puff Pastry Tarts


 

I know, you guys are all tired of puff pastry. But, it is very quick and simple, and I had to think of a way to use up all of the blueberries from our farm. These are not like store bought blueberries, though. Nope, these actually have... flavour. GASP! Otherwise I am reluctant to use blueberries because they are so awful.


Under the blueberries is a scoop of fresh lemon whipped cream and it is all topped of with a nice dusting of icing sugar. Get your sleeves rolled up and put on an apron because it's baking time!

Lemon Blueberry Puff Pastry Tarts

Makes four tarts

Puff Pastry

1 pkg                      puff pastry rounds
1 egg yolk

Preheat oven to 400 degrees. Take four of your puff pastry rounds out (ones with a removable center) and place them on a baking tray. Brush the tops of them with egg yolk and sprinkle on some sugar. Bake for 17-18 minutes. Let cool.

Lemon Whipped Cream

3/4 cup                  heavy cream
1 + 1/2 tbsp           sugar
1 tbsp                    lemon juice
1 tbsp                    lemon zest

Combine all ingredients is a medium sized bowl, using an electric mixer with whisk attachment. Beat until soft peaks form. Once the puff pastry shells have completely cooled take off the circle on top and place a scoop of whipped cream inside each one. Top with fresh blueberries and a dusting of icing sugar. Enjoy!



This is a perfect summer treat. The blueberries blend so nicely together with the lemon whipped cream, it is magical!
